209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Two bags of raw onions were stored on a lower shelving unit next to a wire and garbage bag containing cans. Cleaning supplies (detergent and windex) was stored on the shelving unit above the raw onions.
Corrective Action(s): Operator moved the cleaning agents to the washroom so that they are not stored above a food storage area and removed the bag of cans and wire. Ensure food is stored in a designated area only for food and away from sources of potential contamination (e.g. cleaning agents).

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Empty pizza trays that come out of the pizza oven were being stored inside two cardboard boxes.
Corrective Action(s): Replace the cardboard boxes with equipment that is easy to clean (washable), non-asborbant, durable, smooth, and non-toxic. Correct within 1 month. Operator stated that they would obtain a custom-made washable container.

Comments

All three handsinks were supplied with liquid soap, hot and cold running water, and paper towels.
Walk-in-cooler (3.9 degrees C) and prep. cooler were at or below 4 degrees C.
Chest freezer was at or below -18 degrees C.
Hot-holding was not being conducted at the time of inspection.
Refrigeration units were equipped with thermometers.
100 ppm chlorine sanitizer was available inside a sanitizer pail with a wiping cloth and third compartment sink.
Three-compartment sink was supplied with hot and cold running water.
No evidence of recent pest activity was evident at the time of inspection.
