Comments

Hand sinks were supplied with hot and cold water, soap and paper towels. All coolers were < 4 C. All freezers were < -18 C. Hot held foods were > 60 C. Temperature records were up to date. The dishwasher had 100 ppm chlorine. The glasswasher had 12.5 ppm Iodine. Lactic Acid/ DDBSA sanitizer solution was measured at 700 ppm DDBSA/ 1875 ppm Lactic Acid. Test strips were available for all sanitizer solutions. No evidence of pests. A professional pest control company is onsite regularly. Staff are FoodSafe Level 1 certified. General sanitation was satisfactory.
