Groceries are purchased on the day of kitchen use and brought to the kitchen directly.
All food is prepared on-site.
Chicken is cooked to 74 C. Thermometer available.
No need to rinse raw chicken prior to using.
Discussed sanitizing surfaces prior to use.
At the time of inspection, the low temperature dishwasher was not achieving sanitization (0 ppm chlorine on the plate surface). Manually sanitize the dishes - follow the Fraser Health dishwashing poster. Always verify dishwasher concentration prior to use.
Hot foods are delivered to customer or picked up by customer.
Discussed addition of menu items - provide food safety plan if adding menu items with a different food handling process.
