Observation (CORRECTED DURING INSPECTION): Cheese on melted ice bath at 9.8°C. Ice bath replaced. No timer sticker observed. Place insert with cheese lower into ice bath to maintain temperatures of lower than 4°C. Ensure that all foods that are potentially hazardous on the counters are time stamped for 2 hours. Discard foods after 2 hours.

Observation: Ice machine showed black mould on inside white plastic structure. Must wipe up mould and sanitizer in a way that does not contaminate ice. Ice is a food and must be protected from contamination.
