- Hand-washing basins are stocked with hot/cold water, soap, and single-use towels
- Refrigeration temperatures are ≤4o Celsius with exception of 2 prep coolers (7-10 degrees C) in the front service kitchen
*Coolers were being accessed frequently during inspection-->Monitor temps closely to ensure that internal temperatures return to 4 Celsius (or colder) during less-active periods. If temperatures remain above 4 degrees Celsius, contact a service technician to inspect/repair the units.
- Freezer temperatures are satisfactory
- Foods covered in walk-in cooler
*Ensure to follow FIFO (First-In, First-Out) practices when organizing foods in storage. Place the 'older' products at the front of shelves to ensure they get used first.
*Recommendation: Apply date labels on foods in the walk-in cooler to facilitate FIFO practices.
- Chlorine food-contact surface sanitizer solution available at ≥100ppm concentration
- Chemical-sanitizing dishwasher providing ≥50ppm chlorine residual during rinse cycle
