Observation (CORRECTED DURING INSPECTION): 1) Individual coffee dairy products had internal temperature measured at 19.7'C. Picture taken. Discarded at this time.
2) The following potentially hazardous food products had internal temperatures ranging in between 8.5'C-12.6'C: 6 sandwiches, 4 wraps, 1 pack of corndogs, 5 packs of taquitos and 5 sub sandwiches. All discarded at this time. Pictures taken.

No temperature log available for this side of the cooler. Temperature reading for today's temperature check was taken from the other side of the cooler, which was operating below 4'C at this time.
Corrective Action(s): Ensure all cold potentially hazardous food is stored at 4'C or below at all times. Any cold potentially hazardous food stored above 4'C for more than 2 hours should be discarded.

Comments

Routine inspection conducted:

-Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water.
-Coolers operating at/below 4'C, except mentioned above; Freezers operating at/below -18'C.
-Hot-holding units operating above 60'C.
-Temperature monitoring system in place. Logs kept up to date.
-200ppm Quats available in labelled spray bottles.
-No evidence of pest activity observed at this time.
-Professional pest control company contracted. Recent reports kept on site.
-Washroom handsink satisfactory.
-General sanitation of the facility satisfactory throughout, except mentioned above.

NOTE: Chicken bites at ~50'C, cooked less than 1 hour prior to the inspection as per staff. Ensure to have the doors closed to have the unit operating at 60'C or above at all times.
NOTE: Ensure to take temperature readings from all sides of the open cooler, not just one side.

Follow-up inspection will be conducted, once the open cooler is repaired. Until then, front side of the unit should not have any cold potentially hazardous food stored as agreed at this time.
