Observation: Ice cream machine is cold holding the ice cream mix at 10C. Digital readout observed to be set at 10C in the 2 hoppers.
Corrective Action(s): Service the ice cream machine to cold hold the ice cream mix at 4C or lower in the 2 hoppers. Do not use the ice cream machine until it is able to hold the ice cream mix at 4C or lower. Corrected by: Next routine inspection.

Routine Inspection conducted today.

Handwashing sinks well equipped with hot and cold running water, liquid soap, and paper towels.
Chlorine spray bottles measured at 200ppm. Bleach available on-site. 2-compartment sink available. High-temperature dishwasher final rinse temperature measured at 182F at the manifold.
Under counter coolers and stand-up cooler measured at 4C or lower. Thermometers present in all cooling units.
Pearls are time-tracked. Pearls are kept out in room temperature for 1.5 hours. After 1.5 hours pearls are discarded.
Mechanical mixer and ice machine in sanitary condition.
All food stored at least 6 inches off the floor.
No signs of pests observed.

NOTE: Ensure at least one person with FoodSafe level 1 certification is present within the premise at all times during operations. This includes pre-opening hours used to prepare food.

Overall, facility is well organized and clean.
