203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Cooked shredded beef was observed being cooled in medium-sized deep bowls. Internal food temperatures were measured at 52 to 61 degrees C.
Corrective Action(s): Cooked shredded beef was transfered to shallow containers at the time of inspection. Ensure that potentially hazardous foods are cooled from an internal temperature of 60 degrees C to 20 degrees C within 2 hours, then from 20 degrees C to 4 degrees C within 4 hours to limit the growth of potential pathogens and/or toxins. Ensure appropriate methods are used to facilitate rapid cooling (e.g. placing cooked meats into shallow container(s) in the cooler at 4 degrees C or less).

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Food debris was observed on the back side of the slicer blade and under the slicer blade sharpening guard.
Corrective Action(s): Slicer disassembled to be washed, rinsed, and sanitized at the time of inspection. Ensure that all surfaces are properly washed, rinsed, and sanitized in order to prevent potential contamination of food.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): An uncovered bucket of dry noodles soaking in water was observed on the ground next to the hand sink and an uncovered container of fungus soaking in water was observed on the counter.
Corrective Action(s): Items were covered. Bucket of noodles moved away from sink area. Ensure that all foods are covered to protect from potential contamination. Do not store food items near potential sources of contamination such as sinks or cleaning chemicals, for example.

304 - Premises not free of pests [s. 26(a)]
Observation: Fruit flies were observed in various areas of the kitchen, including, but not limited to, the dry storage area and the two-compartment sink near the dishwasher.
Corrective Action(s): Ensure fly populations are controlled to prevent potential contamination of food and food contact surfaces. Ensure any potential pest attractants, such as organics bins, are removed or properly covered. Ensure all areas of the kitchen (e.g. floors, walls, floor to wall junctions, sinks, and other kitchen equipment) are thoroughly cleaned and sanitized to remove food debris, spills, and other potential attractants. Contact a licenced pest control operator if fly populations are not effectively reduced. Date to be corrected by: Today and ongoing.

Observation: Food debris and/or grease observed on the floor behind/underneath the cook line as well as on the floor under the adjacent preparation table. Some debris also observed in hard to reach areas throughout the premises, including floor to wall junctions.
Corrective Action(s): Ensure the above-noted areas are properly cleaned. Food debris and/or grease may potentially attract pest activity. Date to be corrected by: July 9, 2019.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: The metal strip ledge present along the edge of the dishwashing drain board surface is separated from the surface, allowing water to leak onto the ground. Mildew appears to be present within the surrounding caulking.
Corrective Action(s): Ensure all caulking is removed and area is repaired or replaced in a way that prevents water from dripping onto the ground. Ensure all surfaces and materials are smooth, non-absorbent, easy to clean, and suitable for their intended purpose. Continue to mop surrounding floor to prevent accumulation of water. Standing water may attract pest activity and may present a slipping hazard. Date to be corrected by: August 31, 2019.

Observation: 1. Red indicator fluid has separated in the thermometer located within the large preparation cooler.
2. Operator unable to locate probe thermometer at time of inspection.
Corrective Action(s): 1. Obtain a thermometer that is accurate to 1 degree C for the above-noted unit in order to verify cooler ambient temperatures.
2. Locate/obtain a probe thermometer that is accurate to 1 degree C in order to verify internal food temperatures.
