Comments

Routine inspection conducted of school commissary. Facility is in excellent sanitary condition. Premise is well-lit and highly organized. The following observations were made:

1. Temperatures (Max: 4C for coolers, -18C for freezers; Min: 60C for hot-holders)
- Cooler #1 at 3-4C
- Cooler #2 at 4C
- Cooler #3 at 2C
- Chest freezers (located in separate room in school) at -18C or below. Domestic freezer in the same room is only meant for staff use
- Cooling units equipped with accurate thermometers
- No hot-holding at time of inspection. All food products are cook-to-serve
- Soup stock was being prepared at time of inspection. In an hour, head chef states that it will be cooled with ice wands and placed in the freezer for storage until use
- Temperature logs maintained for 3 coolers. Please ensure that you also maintain temperature logs for the freezers in the other room

2. Hygiene and Sanitizing
- Hand wash stations (x2) adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- Quaternary ammonium compound (quats) sanitizer spray bottles (x2) contain 200 ppm quats
- Low-temperature dishwasher contains 100 ppm final rinse chlorine residual for adequate sanitizing. NOTE: In the previous inspection, it was requested that you maintain daily dishwashing logs. Head chef was instructed to maintain these logs so that any deficiencies in the dishwasher can be rapidly detected and addressed
- Utensils, spatulas, spreaders, knives, patisserie, scoops are stored securely inside labelled drawers - excellent
- Overhead equipment including cheese graters, whisks, and sieves are all in sanitary condition
- Ventilation slats are well maintained

3. Storage and Organization
- All food items are stored at least 6" off the floor for easy cleaning - excellent
- Dishpit area is well organized - all dirty dishes from lunch rush were cleaned, placed through the dishwasher, and stored at time of inspection
- Bulk food items are inside tight-fitting lids or secure food bins - excellent
- Chemical storage area is separate from food items - facility has a dedicated janitorial room

4. Administrative
- Permit posted and up-to-date
- Operator has FoodSafe 1

5. Pest Control
- No visible signs of recent pest activity at time of inspection
- School contracts professional pest control company to conduct monthly audits
- Mechanical traps did not contain any rodents at time of inspection

No concerns at this time. Please contact the health inspector if you have any further questions. Further inspections next year will verify that you have acquired chlorine test strips and regularly maintain dishwasher logs (e.g. daily at the beginning of the day)
