- Temperature Control: Monitoring is required to be conducted by all departments.
- Manual Dishwashing: Ensure all food contact surfaces and implements are being washed and disinfected after use or on a timely manner.. 4 Step Method. All implements are to be stored in a sanitary manner. Ensure all staff are properly trained. Corporate policies are to be followed.
-> Wiping cloth/spray bottle storage: OK.
- Use 200 ppm Quats solution and make as per manufacturer's instructions. Change sanitizing solutions in sinks and buckets every couple of hours. Change sanitizing solutions in bottles daily. Use test strips to measure the concentration of sanitizer.
- Food Storage: Defrosting of "Frozen Food" items are to be reviewed by all staff.
- Chemical storage: Ok.
- Sanitary Facilities: Areas in front of handsinks are to be kept clear of obstructions.
- Staff illness/hygiene: Reviewed.
- Equipment: All items and surfaces are to be kept in good repair. Any damaged items are to be removed from use.
- Pest Control: An active pest control program is currently in place. Records reviewed. Refer to Service Providers "recommendations."
