Observation (CORRECTED DURING INSPECTION): Concentration of chlorine sanitizer for in-use wiping cloths was less than 10ppm.
Corrective Action(s): Chlorine sanitizer shall be 200ppm to keep the in-use wiping cloths sanitized. Informed operator that the towel and bucket of sanitizer need to be changed every 2-3 hours, and to prepare the sanitizer using only bleach and water. Operator corrected at time of inspection.

Observation (CORRECTED DURING INSPECTION): Mildew was found inside of the ice machine.
Corrective Action(s): Mildew in the ice machine can contaminate the ice. The inside of the ice machine shall be cleaned and sanitized on a regular basis to prevent the mildew. Discard the ice and thoroughly clean and sanitize the inside of the ice machine. Operator started discarding ice in preparation for cleaning the ice machine at time of inspection.

Observation (CORRECTED DURING INSPECTION): Damaged bucket was being used to soak noodles.
Corrective Action(s): Damaged utensils shall be discarded as they cannot be effectively cleaned. Instructed operator to transfer the noodles to a bucket that was in good condition and to discard the damaged container.

Freezers were less than -18 degrees Celsius.
Hot holding units were over 60 degrees Celsius.
Food storage practices were satisfactory.
Organization of storage areas was satisfactory.
Staff hygiene and food handling practices appeared satisfactory.
Hand sinks were stocked with liquid soap and paper towels.
All sinks equipped with hot and cold running water.
General sanitation was satisfactory.
Chemicals were stored in a safe manner.
Low temperature dishwasher had a chlorine residual concentration of at least 100ppm.
No signs of pests.
