Observation (CORRECTED DURING INSPECTION): No one with foodsafe training was available at time of visit.. Manager with food safe training showed up during inspection.
Corrective Action(s): Ensure to have adequate foodsafe trained staff at all time during operation.

Comments

- Temp of all cooler and freezer are satisfactory (<4 oC and <-18 oC)
-Accurate thermometers are provided
-Paper towel and liquid soap are provided at all sinks.
-Foods are stored properly and protected
-No sign of pests noted at time of visit.
-General sanitation was satisfactory
-Ice machine was clean and free of mold- Ice scoop stored properly out of machine
-Cooling stick is being used for cooling liquid foods (khoreshets) SS/shallow containers being used to cool down cooked rice then transfer to bus pans in walk in cooler
-Kebab skewers are in separate coolers .
*Discussed: after opening a can to transfer foods to a sealed container (food grade)-noted an opened can (dolmeh) with plastic covering it in the cooler
*Provide chorine test strip (dishwasher) and quats test strip (sanitizer at the main)
* No temp log sheet on site. Manager admitted that no record being kept- Ensure to monitor and record temp of all coolers, freezer, hot holding units at least twice daily-and sanitizer concentration in dishwasher and spray bottle/bucket at least once daily.

This is the first inspection after opening so it is considered as education - repeated similar violation in future may result in enforcement (correction order,violation ticket, etc)
