Observation (CORRECTED DURING INSPECTION): An insert of vegetable displayed in the front hot holding unit was had an internal of 44C.
Corrective Action(s): Ensure all food product are properly reheated prior to be stored in the hot holding unit. All previously cooked foods must be cooked to 74C prior to be displayed in the hot holding units. All hot foods must be kept 60C or above. Food product was reheated to 74C.

Comments

Routine inspection conducted and the following were noted
Food items stored in the hot holding units were at least 60C or above, except for an insert of vegetables where the internal temperature of 42C.
All cooler units were 4C or below
Stand up freezer was at -18C.
hand washing station satisfactory.
3-compartment sink was setup. Sanitizing compartment was filled with a 200ppm quats solution.
All food items properly covered and stored at least 6 inches off the ground.
General sanitation satisfactory.
No pest activity noted.
