Observation: Cooler for short term juice and milk storage - air temperature 9C (thermometer inside of cooler and inspector thermometer).
Daily temperature records show <4C this morning (about 5:15am). Food is only in this cooler for a limited time.
Corrective Action(s): Re-check cooler temperature and adjust/service if temperature does not go down to 4C/40F or colder.

Comments

Routine inspection.
Hand sinks have hot/cold water, liquid soap, and paper towels in dispensers.
Disposable, non-latex gloves worn. Uniforms and hair nets worn.
Walk in cooler and stand up cooler - all are keeping food at 4C/ 40F or colder. Temperature records are being kept.
See above re juice/milk cooler.
Food in walk in cooler is covered, labelled, and dated. Raw meat on bottom shelf - good.
Hot holding - is above 60C/ 140F. Temperature records are being kept.
Defrosting food in walk in cooler - good.
Food Safe -Level 1 (or equivalent) - Support Services Manager certificate (expiry 05/2025).
Dry food storage - food stored on shelves up off of floor.
Meat slicer appears to be clean today. Using quats sanitizer for meat slicer.
Triple sink - Quats sanitizer automatically dispensed. Wiping cloth stored in 200ppm quats sanitizer (colder water).
*** Verify with supplier the concentration required to sanitize food contact surfaces (such as 200ppm only or 200-400ppm) without a potable water rinse as this is not clear on the label.
Test strips for Quats are available.
Dishwasher - final rinse gauge reads >82C/ 180F and water temperature reached >71C/ 160F inside of the machine - good. Records are being kept.
Cleaning - routine cleaning satisfactory.
Pest control - no obvious signs of pests. Last report from licenced pest control company reviewed. Monitoring is in place.
