Observation: Multiple trays of chopped fries were found on metal rack in walk-in cooler without a cover. Ceiling above had surface materials peeling off and there were dust build-up on ceiling and on the fan guard.
Corrective Action(s): Provide a cover for the fries.
Correction date: by April 11, 2019.

Observation: The following conditions could attract or become harbourage areas for pests:
-under deep fryer: oil spill
-next to grease trap: grease found
-under dishwasher: food debris
-under handsink area (back): potato skin, bottle of vaseline found
-cluttering items back storage area: dust pan, shoes, plastic bags, chemical bottles found on floor
-grill area
Corrective Action(s): Clean the areas noted above.
Correction date: by April 15th, 2019.

Observation: The following areas required cleaning:
-Fume hood had grease build-up, droplets found along the right side.
-Ceiling in walk-in cooler had dust build-up.
-Fan guards in walk-in cooler.
-Floor under the handsink area (back)

General Comments:
-Owner is Food Safe Certified around Dec 2017.
-Ice machine not working, so not in use at time of inspection.
-Coolers/freezers:
Efi freezer -14C
Hoshizaki freezer -10C
Walk-in cooler 3C
Hoshizaki cooler 2C
Keg cooler 1C
Efi prep cooler (bottom) 4C (drawers to the right don't work properly, so not is use), (top) mustard 5C, pickles 4C *keep lid closed, very little food found in top inserts
True Refrigeration cooler drawers: beef 4C, chicken 3C
-Sanitizer mixed in bulk bin at back at 100ppm.
-Pest control service reports from February provided mentioned of sanitation concerns. Monthly contract in place. Continue to follow the recommendations from the reports.
-High temperature dishwasher at 76.9C at the plate.
