Observation (CORRECTED DURING INSPECTION): **This is a repeated violation - any future repeat violation may lead to increase enforcement actions**
Any dishes that were washed after the new bottle of sanitizer was installed at the dishmachine were not adequately sanitized as no chlorine residual was detected; These dishes are not properly washed and may still harbour bacteria.
Corrective Action(s): **Issue corrected at the time of inspection**
Rewash anything that was washed at the dishmachine after the new bottle of sanitizer was installed.
Please follow your Sanitation Plan and ensure all staff checks the chlorine concentration at the dishmachine at the start of the day when the dishmachine is being used and whenever a new bottle of sanitizer is installed. The facility has access to chlorine test strips - please use that to verify 50 - 200 PPM chlorine residual can be detected at the machine prior to washing any dishes.

Observation (CORRECTED DURING INSPECTION): The soap dispenser at the front of house handwash station (unit closes to cash registers) was broken and unable to dispense soap at the start of the inspection.
Corrective Action(s): **Issue corrected at the time of inspection** Soap dispenser was replaced by a new unit that is functional and able to dispense liquid soap.
Reminder: Facility was approved based on the number of handwash stations designed to accomdate work areas and employees per area. You cannot just omit a handwash station and claim that food handlers can use the other handwash station in the facility. All handwash stations in a facility must always be functional and equipped with liquid soap and paper towel at all time to allow food handlers to perform proper handwashing when required.

Low temperature dish machine was not functioning properly at the time of inspection. No chlorine residual was detected after the rinse cycle at the plate level.
Corrective Action(s): **Issue corrected at the time of inspection** As per Manager, a new bottle of sanitizer was installed at the dish machine and was probably not properly primed after the installation of chemical. After the machine was primed, 50 PPM chlorine residual was detected from the plate level after washing.

Routine inspection conducted today:
Handwash stations in the back prep area and staff washroom were accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4.0C or below.
All freezer units were at -18.0C or below.
All hot hold units were holding hot food above 60.0C.
All food stored protected, off the floor and labelled.
Sanitizer containers set-up throughout the prep area. 200 PPM QUAT detected in the 3 containers tested.
Wall mounted sanitizer tested and noted with 200 PPM QUAT.
Utensils noted sanitary and in good condition.
Interior of the ice machine, fume hood and deep fryers noted in excellent sanitary condition.
No signs of pest activities noted during the inspection.
Manager's FOODSAFE level 1 equivalent certificate verified - expiry Feb 4, 2025.
