Observation: Dishwasher is not in use and is scheduled to be serviced.
Corrective Action(s): When using dishwasher, it must be able to provide a final sanitizing rinse such as 50ppm chlorine. Use test strips to verify. In the meantime, staff are using the triple sink to wash, rinse, and sanitize trays and utensils etc. using a quats sanitizer to sanitize. Measured 200ppm - follow directions on the label.

Follow up inspection.
Rice hot holding is at 60C (140F) or hotter - good.
Reheat food to 74C (165F) rapidly (within 2 hours) before hot holding.
Quats sanitizer concentration is a bit high at about 400ppm or stronger - follow directions on the label. New solution measured at 200ppm - satisfactory.
Change the cold water used to store utensils when the ice melts. Wash, rinse, sanitize. and air dry utensils used throughout day every 4 hours.
