Observation (CORRECTED DURING INSPECTION): Surface sanitizer in designated bucket measured <50ppm QUAT concentration.
Corrective Action(s): The operator prepared new sanitizer at 200ppm QUAT concentration. The min concentration is 200ppm QUAT.

Observation: Build up of grease in the following areas:
- floors throughout the kitchen
- floors inside the walk in cooler
- floors of the dishpit
Corrective Action(s): Clean the areas noted above. Implement a regular cleaning schedule for floors throughout the kitchen.

Observation: Missing daily temperature log. Missing thermometers and failure to demonstrate proper use of probe thermometer suggest that temperatures of coolers, freezers, and hot holding units were not being monitored.
Corrective Action(s): Immediately begin daily temperature log for all coolers, freezers, and hot holding units. All staff must be adequately trained to use probe thermometers to monitor the hot foods inside hot holding units.

- All handwashing stations (back) supplied with cold/hot running water, soap, and paper towels.
- Three compartment sink available for manual dishwashing. QUAT sanitizer available at 200ppm concentration.
- Dry storage area has adequate space and wire racks. Dry food items stored min 15cm off the floor.
- No signs of pest activity at the time of the inspection. A professional pest control company implements pest management system.
