[s. 14(2)] (Walk in cooler air temperature varies and is at 4 - 5 C (ok) near the fan but the food temperatures (3 taken) are all above 4 C (8-9C). There is ice build up behind the fan. Your records show 39F (<4C) this morning but your thermometer currently is above 40F. Fresh garlic in unsalted butter is being stored at room temperature. Creamers in bar are above 4 C.)

Comments

Follow up inspection. All items have been corrected:
Walk in cooler has been serviced and air temperature is now below 4 C - good.
Ice wands are being used to quick cool hot foods prior to placing in the walk in cooler.
Glassware washer room has been cleaned and floor no longer has ponding water. No fruit flies noted today in this area.
Test strips are available for the main dishwasher (50ppm chlorine required), glassware washer (12.5ppm iodine required), and quats sanitizer (about 200ppm - check bottle label).
Staff washroom has been painted, cleaned, toilet tank cover replaced, and liquid soap and paper towels are provided.
Provide floor plans for approval prior to any future renovations. Back food prep area - hand sink and prep sink available as previously discussed.
