209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Found bottles of lemon juice and salad dressing stored beside cleaning chemicals on the same shelf. The food could be come contaminated with chemicals.
Corrective Action(s):
Move the bottles of lemon juice and salad dressing away from the cleaning chemicals and store it on a different shelf. During the inspection, staff moved the bottles of food to a shelf above the cleaning chemicals.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
1) There is accumulation of grease and food debris on the floor under the prep table, deep fryers, and donair tables. This will attract mice and flies.

2) There are grease "streaks" on stainless steel surfaces and patron tables. The grease will attract pests.
Corrective Action(s):
1) Clean up and remove all the food and grease on the floor in the mentioned areas. Use hot soapy water, degreaser and a scrub brush or mop. Ensure to wash the floor right to the back walls and in the corners. Move equipment and tables away from the wall so the floor can be cleaned thoroughly. Cleaning this area MUST be done every night.

2) Clean stainless steel and patron tables with hot soapy water at the end of each day to remove the grease.

Observation (CORRECTED DURING INSPECTION): Aluminum foil lining the donair drill has accumulated grease and is burned. The aluminum foil is a fire hazard and it will also attract pests.
Corrective Action(s):
Immediately change the aluminum foil on the donair machine with new foil. The foil must be changed 2-3 times a week to prevent accumulation of grease and to prevent the grease catching fire on the foil.
During the inspection, staff changed the foil.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezer -21C; hot holding units above 60C; and thermometers present.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- 2-comp sink ware washing being done. Dish soap and bleach present for washing and sanitizing.
- All foods stored in food grade containers; covered; labelled; date coded; food stored in groups with raw proteins separate from RTE foods; and foods stored 6" off the floor on racks and shelves.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is satisfactory. Improvement needed in the mentioned areas.
- Exhaust canopy and filters professionally cleaned in November 2023 and next service due in May 2024. Staff clean filters every month. Detailed cleaning of the cooking stations done weekly.
- No signs of pests.
- Owner possesses a valid FoodSafe Level 1 certificate (expires in 2026).
- Secondary cook step completed on a flat grill.

ACTION
Clean the floor under and behind the prep tables with hot holding units & donair machines, deep fryer, and flat grill. Move these away from the walls to be able to clean the floor underneath. Clean the floor every night.
Clean stainless steel and patron tables with hot soapy water at the end of each night to remove the grease and streaks. Do this every night.
Change the aluminum foil on the donair grills 2-3 times a week.

**A follow-up inspection to occur on Apr. 11/24 to ensure all action items have been corrected.**
