Observation (CORRECTED DURING INSPECTION): Build up of mildew and dirt inside the ice machine cover.
Corrective Action(s): Immediately drain the ice machine, scrub with sanitizer to remove the mildew, then air dry prior to refilling. This will be checked during the next inspection.

Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: - Dishwasher dispensed 0ppm chlorine concentration at the time of the inspection. Multiple cycles ran. Utensils, plates, cooking equipment are not being sanitized properly.
- Significant build up of mildew and dirt inside the ice machine cover.
Correction: - Use 2-compartment manual warewashing method to wash dishes while the dishwasher is being fixed. Re wash and re sanitize all utensils, plates, and cooking equipment.
- Clean the inside of the ice machine. First drain the ice machine, scrub with bleach sanitizer, air dry, then refill.

Follow up inspection to report #DSOG-C6VT48:

- Most potentially hazardous food items in the display coolers stored in ice, maintaining < or = 4C. Continue to monitor the temperature of all coolers using a temp log.
- Dishwasher has been fixed and now dispenses 50ppm chlorine bleach concentration sanitizer. New test strips available. Ensure to test the sanitizer daily using appropriate test strips (ie in the morning before operation).
- The main handwashing sink is free of any equipment or food debris.
-General sanitation still needs improvements. Please refer to the previous report for specific areas.
- Provide working thermometers inside all refrigeration units.
- Immediately begin daily temperature log for all coolers/freezers. This will be verified during the next inspection.
