Routine Inspection
-Walk-in cooler at 4 C or below.
-Freezers are at -18 C or below.
-Mini front cooler at 4 C or below.
-Bleach sanitizer in labelled spray bottle available at 400 ppm - a solution greater than 200 ppm requires a potable water rinse. Operator was instructed to re-make solution. Only use 1/2 tsp of unscented household bleach per litre of water to make a solution of 100-200 ppm.
-Hand washing equipped with hot and cold running water, liquid soap and single-use towels.
-Dishes washed and sanitized usually 3 compartment sink. Bleach solution registered at 200 ppm.
-Cooler and freezer temperatures records maintained and available for review.
-Re-heat and cook temperature of proteins verified and recorded. Ensure the re-heat temperature of all potentially hazardous foods (ex. cooked pasta, cooked veggies) is verified.
-Ensure hot foods are cooked or re-heated to 74 C (165 F) and kept hot at 60 C (140 F) or above during delivery. Verify temperature during and upon delivery. Maintain records.
