General sanitation is good. No obvious signs of pest. Handwashing stations are satisfactory. Temperature of the refrigeration and freezer units are satisfactory. Temperature log is maintained. Dishwasher temperature is adequate. Hot food items are individually portioned and held under heat lamp for service (<2hrs). No concerns noted with food handling. Ensure quats sanitizer is diluted correctly and use test strips to verify daily. Clean the inside of the ice maker. Mold is noted on some surfaces (non-food contact).
