Observation (CORRECTED DURING INSPECTION): Chicken made today was cooling in a full bus pan with the lid covered. Chicken was probed at 22C.
Corrective Action(s): Hot potentially hazardous foods must be cooled from 60C to 20C in 2 hours or less and from 20C to 4C in 4 hours or less. Foods must be cooled in shallow layers and with the lid slightly open to facilitate rapid cooling. Chicken was transferred into multiple containers at the time of inspection.

Observation (CORRECTED DURING INSPECTION): No bleach sanitizer prepared in the 2-compartment sink at the time of inspection. Staff was washing equipment.
Corrective Action(s): 2-compartment sink must be prepared and available for use for sanitizing equipment and food contact surfaces. Bleach sanitizer at 100ppm was prepared at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Handwash station did not have any single use paper towels.
Corrective Action(s): Handwash station must be accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels to facilitate proper handwashing. Single use paper towels were replaced at the time of inspection.

-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and well maintained.
-Operator FoodSafe Level 1 valid until May 8, 2023. Staff member on-site FoodSafe Level 1 valid until Nov 6, 2022.
