Observation: Cheese slicing wheel attachment found put away with a large amount of stuck on, dried cheese debris

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] (REPEAT VIOLATION: Meat slicer found in poor sanitary condition. Slicer was not in use at time of inspection)
Comments

Cleaning has improved in most parts of kitchen, however the following areas still require attention:
- walk in cooler. This must include removing all food boxes off the floor
- along the West wall of the kitchen. Existing wooden storage racks are not allowing for staff to deep clean. Replace these wooden structures with something that has wheels, or is high up enough to allow nightly cleaning. If this area was thoroughly cleaned on a regular basis, rodent droppings would have been noticed immediately
A pest control company has completed an inspection. Recommendations were made:
- tile the ceiling
- patch hole in storage room (another hole observed by EHO between 3 compartment sink and hand dryer)
- do a deep clean of the kitchen

Note: the back door was open when I pulled in for inspection, and remained open until for an extended period of time. As discussed with staff on site, this is the most probable entrance point for mice. This door must be modified or replaced to eliminate the rodent infestation. Have a plan outlined and with a deadline by your reinspection on Friday.
