Routine check.
Coolers and hot holding - temperatures satisfactory. Thermometers available.
Freezer - on defrost - check temperature again and must go down to -20C for storage of salmon.
Note: Salmon, if not cooked and when on menu, is to be frozen at -20C for 7 days. Update your food safety plan.
Oyster/shellfish tags kept for 90 days. Warning on menu.
No menu items with raw eggs.
Hand washing stations -several and all equipped with hot/cold water, liquid soap, and paper towels.
Quats sanitizer - 200ppm. Test strips available.
Commercial dishwasher has a 50ppm final chlorine sanitizing rinse.
Routine cleaning -satisfactory.
No obvious signs of pests. Monitoring is being done. Door sweep was installed at back door.
Food Safe training - reviewed expiry dates. Operator to renew their certificate when possible and by January 2024.
Other staff on site have Food Safety training.
