Observation (CORRECTED DURING INSPECTION): No sanitizer available to sanitize cuttings boards and counter tops. Operator made sanitizer with bleach to 100-200ppm chlorine residual at the time of inspection. Importance of having sanitizer discussed with chef.
All cuttings boards sanitized at the time of this inspection.
Corrective Action(s): Food equipment are to be clean and then sanitized with bleach sanitizer before use.

Observation (CORRECTED DURING INSPECTION): Hand wash station noted obstructed by 2 small chair in front of the sink. Operator removed chairs and now hand washing sink is free to use. Importance of hand washing discussed.

Observation: 1- Noted raw chicken stored on shelf above vegetable tray and cooked meat in both walk-in coolers. This is unsafe food storage practice. Also, this is a repeated violation from previous inspection. Ensure to address the issue to avoid further enforcement actions.
Operator separated raw food from cooked and ready to eat food at the time of this inspection.

Raw chickens must always be separated from other food.

2- Drop in ceiling tile noted missing above food prep counter while staff preparing food. This is not acceptable. Dust and dirt from ceiling may fall into food. Staff moved food preparation to adjacent counter.
Corrective Action(s):
2- Do not prepare food directly below this opening on ceiling.
Replace ceiling tile and ensure not open space left above food prep area in kitchen.

General sanitation requires attention.. Ensure clean and sanitize door handles, counters, equipment facing and walls in different areas.

- Dishwasher equipped with detergent and rinse aid, registered at or above 71C at final rinse.
- Walk in coolers measured at or below 4C. Food separation discussed.
- All other coolers measured at or below 4C. Temperature monitoring log is to be kept updated.
- No sign of pest activity noted at this date.
- FH permit posted in front.
- Food trays/containers in walk-in cooler properly covered.
- Kitchen is well lit.
- Customer washrooms maintained.

Discussed renovation proposals for front of the seating area.
Recommended to install fly control lights properly in place far from food area.
