Follow up inspection:

The line cooler was re-serviced and it was 4 degrees C or colder (top inserts and bottom left inserts) with the exception of the lower right part of the cooler which was at 5.8 degrees C. The bottom portion of the cooler was free of potentially hazardous food. Leftover cheese is being placed in the walk-in-cooler at the end of the day and the prepped vegetables in the inserts are rotated within 4 hours according to the chef.

Please continue monitoring cooler temperatures and ensure potentially hazardous food (e.g. cheese, prepped vegetables, and meat) is stored at 4 degrees C (40 degrees F) or colder.
