Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: 1. High temperature dishwasher not reaching the minimum required temperature of 71C on the plate surface during final rinse.
2. Surface sanitizer (bleach) registered at more than 1000ppm (Max allowed is 200ppm)
Correction: 1. Manually sanitize all utensils with 100-200ppm bleach after running them through the dishwasher.
2. Staff made a new solution that registered between 100-200ppm chlorine.

Follow-up to report 257051

Bleach sanitizer at 200 ppm chlorine.
High temperature dishwasher registered at least 71 C after 2 runs - ensure staff are verifying temperatures. Obtain a waterproof maximum temperarture registering thermomter or thermo-label to verify temperature. The gauge on the dishwasher is inaccurate and unreliable.
Improvements have been made to general sanitation,

Discussed proper cooling methods with operator. Obtain ice wands to assist in rapid cooling.
Reminder, food must be cooled from 60 C to 20 C within 2 hours and 20 C to 4 C within 4 hours.
