Have dirty zone vs clean zone and follow the 4 steps of manual dishwashing

Observation: Rodent dropping noted in entire floor ( back and front) under all equipment, shelving unit on shelving inside cabinet in front - not near foods
Corrective Action(s): -Clean and sanitize
-Hire a pest control to identify issues contributing to the rodent issues
-Put sticky traps and snap traps
-Protect all foods, take out containers and clean dishware

General
-Paper towel and liquid soap are provided at hand washing sinks
-All coolers are maintaining foods at 4 degrees C. or colder with the exception of noted unit
-All freezers are maintaining foods at -18 degrees C. or colder.
-Hot holding units >60 oC
- Bleach solution in spray bottle >100 ppm
-General sanitation is very good
-Good personal hygiene noted by staff

Address all issues and send a report to the area inspector with actions taken to address those no later then Oct 26-2023 via email.
