Observation (CORRECTED DURING INSPECTION): Holster for soda wand had a significant mildew growth present on internal surfaces.
Corrective Action(s): Removed for cleaning during inspection. Ensure this is cleaned and sanitized on a regular basis.

Observation: Bar glass washer has been switched off, as the unit has developed a leak. All glasses are being washed in the main dishwasher.
Corrective Action(s): Have glass washer repaired by tomorrow (7th March 2018). Call area inspector for reinspection once fixed.

*General sanitation satisfactory throughout premises. No evidence of pest issues observed during inspection.
*All cooler and freezer temperatures satisfactory; thermometers available in each unit. Records kept.
*Hot holding units operating at or above 60 C.
*Organization of raw and ready-to-eat foods satisfactory. Food generally wrapped or stored in lidded containers. Note: ensure cooling pulled pork in walk-in cooler is covered within 2 hours of inspection.
*Cooling practices appeared to be in accordance with approved food safety plan.
*Hand sinks stocked with warm water, liquid soap and paper towels.
*Dishwasher provided 50ppm chlorine sanitizer in final rinse.
*Ice machine maintained in clean condition (top section to be checked at next inspection - ensure this is cleaned and sanitized according to manufacturer's directions).
*Dry storage maintained in tidy condition.
*Clean-in-place equipment maintained in clean condition.
*Tools and utensils stored in clean condition.
*Quat sanitizer available at 200ppm in several buckets and bottles.
