Note: Food service worker reported slicer is used in the morning once and not used throughout the day. Ensure slicer is thoroughly cleaned and sanitized after use.

Observation: - Mouse droppings (minor amount) noted along edge of floor by dry storage shelving.
Corrective Action(s): - Move shelving unit away from wall and clean up all droppings and disinfect area. Monitor area for any further activity. If additional droppings noted, contact Pest Control Technician. [Correction date: 10-June-2021]

Observation: - Temperature of walk-in cooler was -5C (as measured inside and reading on external gauge)
Corrective Action(s): - Have walk-in freezer repaired/serviced so that it is capable of maintaining a temperature of -18C or colder. [Correction date: 1 week]
Note: All food in walk-in freezer was frozen solid at the time of the inspection.

Comments

- Hot and cold running water supplied to handsinks and warewashing sinks
- Liquid soap and paper towel supplied to kitchen handsinks, sink in servery area, and in staff/public washrooms
- Coolers were operating at 4C or colder:
- 2 door reach in cooler (by freezer) 4C
- 2 door reach in cooler 4C
- Reliant 3 door line cooler 3C
- True 2 door cooler 4C
- 2 door line cooler 4C
- 1 door line cooler (servery area) 2C
- Dishwasher was operational. >50ppm chlorine detected on dish after cycle. Test strips present for monitoring.
- Wiping cloths were stored in buckets with bleach sanitizer solution. Concentration measured 200ppm Chlorine.
- Bleach solution present in spray bottle at server station for use on tables
- Exhaust canopy was serviced Feb 2021 and appears to be maintained.
- 1 staff member on duty at the time of inspection holds valid certificate for Foodsafe equivalent course. Manager arrived part way through inspection and has valid Foodsafe level 1 certificate
- Staff in kitchen were observed to wearing gloves. As a reminder, gloves are not a replacement for handwashing. Gloves must be changed and hands washed and any time they may become contaminated.

Covid Safety Protocols:
- Covid safety plan not complete. Worksafe template was present; however, not yet completed. To be completed today.
- Some tables in dining area have been eliminated; however, of the tables currently in place, there was not 2m distance between them. There must be 2m between the backs of the seats of adjacent tables.To be corrected immediately.
- Max number seats present at tables was 6
- Contact names and numbers of patrons were being collected for the purpose of contact tracing. Record date/time as well.
