Observation (CORRECTED DURING INSPECTION): Both food contact surfaces sanitizers in steel containers registered at 50 ppm Quats.
Corrective Action(s): Ensure food contact surface sanitizer is available and registers at 200 - 400 ppm Quats or follow manufactures instructions.

Observation: 1) Preparation line cooler is broken/not working. Operator is aware and service order has been submitted. No food is currently being stored in bottom compartment. Cold potentially hazardous food are placed in ice bath and time stamped with a 2 hour discard sticker.
2) Quats dispenser is not in good working order. Operator is aware and service order has been submitted. Additional manual dilution done by staff to ensure 200 - 400 ppm Quats.

Corrective Action(s): 1) Repair and service preparation cooler so it registers and maintains temperature at 4C or below
2) Repair and Service Quats dispenser to ensure it registers at 200 - 400 ppm Quats. In the interim continue to manually dilute sanitizer solution and verify concentration using test strip.
