Observation (CORRECTED DURING INSPECTION): Spray bottle labelled as sanitizer contained a peroxide cleaner. This chemical does not sanitize food contact surfaces.
Corrective Action(s): Staff had made a fresh QUAT sanitizer which registered at 200 ppm.

Observation: *Repeat Violation* Black build-up noted around the handwashing station and the ice storage in the front area. Staff indicated they attempted to clean and sanitize the area previously but it appears that it is behind the caulking.
Corrective Action(s): Wash and sanitize the above-mentioned areas and maintain them in a sanitary condition at all times. Replace caulking if required.

- All cooler units registered a temperature at or below 4 deg C
- All freezer units registered a temperature at or below - 18 deg C
- Cooked pearls are discarded after 4 hours and stored at room temperatures
- Pre-made jelly are held at or below 4 deg C. Containers are placed in an ice water solution
- All handwashing stations supplied with hot and cold running water, liquid soap and paper towel
- Three compartment sink available for manual warewashing, drain plugs available, sanitizer solution registered at 100 ppm chlorine
- Food contact sanitizer (see code 302)
- In-use equipment stored in containers with ice
- Ice machine maintained in a sanitary manner, scoop is stored outside
- Back dry storage area maintained in a sanitary manner
- No signs of obvious pest activity, licensed pest control services are in place
- FoodSafe Level 1 requirement met
