Corrective Action(s): Operator plans to replace existing tandoor oven with new one on wheels, which will allow for easier cleaning in the future. Ensure to complete deep cleaning in the meantime.

Comments

- Copy of updated floor plan has been received.
- Bleach sanitizer solution available at 100 ppm
- Kitchen hand sink was easily accessible for hand washing, and was not being used for food preparation. Good.
- No frozen food was thawing out at room temperature at time of inspection. Good. Ensure proper thawing discussed during last inspection are adhered to.
- Dough machine was in use at time of inspection. OK. Ensure to thoroughly clean and sanitize after each use, and never leave the dough machine dirty overnight.
- All other cleaning has been completed. Ensure to continue cleaning hard-to-reach areas on a weekly basis.
