Observation (CORRECTED DURING INSPECTION): Chicken breasts were being defrosted in the dish pit.
Corrective Action(s): Chicken breasts moved to the prep sink for defrosting under cold running water. Ensure that you DO NOT defrost any items inside the dish pit. The dish pit is intended strictly for ware washing.

Comments

Follow-up inspection to routine inspection that was conducted on August 30, 2019 (RPT#: JMAA-BFJVEL). The following observations were noted:
Area underneath and behind the cook line, underneath expo line, along the dish pit, and in the dry storage room have been appropriately cleaned
Rodent droppings inside the dry storage room have all been removed. Dry storage room has been re-organized and all dry products have been placed inside containers with tight-fitted lids
Pest control company arrived on the following days: August 31 (drain cleaning and disinfection), September 7 + 8 (inspection for rodent activity, application of enzymatic cleaner to affected drains, spot treatment for flies after restaurant closed). Grease trap in dish pit area, and near back door of kitchen, were both serviced

Fly activity is still present at the back hallway of the establishment. Head chef states that repeated treatments are in progress. Follow-up inspection to occur later this month to ensure that the fly infestation has been treated.
