Observation (CORRECTED DURING INSPECTION): Operator had a spray bottle filled with undiluted commercial bleach (10%) for disinfecting surfaces.
Corrective Action(s): Bleach concentrations in excess of 200ppm may be toxic for human health. 10% bleach is 100,000ppm. Spray bottle was emptied at the time of inspection.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Kitchen handwash station was turned off because faucet does not turn off properly.
Corrective Action(s): Handwash stations must be accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels to facilitate proper handwashing. Water taps were turned back on at the time of inspection.

402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation (CORRECTED DURING INSPECTION): Operator observed scratching head, followed by working along the prep line without handwashing.
Corrective Action(s): Operator and staff must adhere to good hand hygiene practices. Handwashing must be carried out whenever hands become potentially contamination.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Three opened cans of food were found stored in cooler units in the kitchen (mango puree, tomato soup, and coconut milk). Tomato soup was found to have purple onion debris in it.
Corrective Action(s): All canned items, once opened, must be transferred into food grade containers with proper food grade covers to protect foods from potential contamination. Mango puree and coconut milk were transferred into food grade containers. Tomato soup was discarded.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Handwash station hot water faucet does not work properly allowing water to leak.
Corrective Action(s): Service handwash station and ensure it is in good working order. While faucet is waiting to be repaired, faucet must be kept on, leaking water. Operator stated service technician has been contacted and will be on-site today.
Correction date: Today.

Observation: Sanitizer spray bottle and pail were unlabelled.
Corrective Action(s): Ensure all chemicals are properly labelled to prevent accidental mixing or misuse of chemicals. Once labels fall off or fade, containers must be relabelled.

Comments

-Both upright coolers were at 4C.
-Prep cooler was at 4C (top and bottom).
-Under counter cooler was at 0C.
-Freezer was at -24C.
-Items for hot holding were being reheated on the stove and the time of inspection and hot holding unit was warming up.
-Sauces made the previous night were properly cooled and probed at 4C.
-High temperature dishwasher had a final rinse temperature of 75C on the dish surface (minimum 71C required for proper sanitizing).
-Foods stored off the ground.
-General sanitation satisfactory at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary.
-Operator FoodSafe Level 1 valid until April 9, 2023.
