Observation (CORRECTED DURING INSPECTION): High temperature dishwasher unable to reach minimum sanitizing temperature (71 degrees C at the utensil surface). Temperature at utensil surface was tested over four cycles and measured 59 to 66 degrees C. Note: Temperature dropped after third cycle.
Corrective Action(s): Ensure that all equipment/utensils/food contact surfaces are properly sanitized. Once items have been run through the dishwasher, ensure they are fully submerged in a 200 ppm quats sanitizer solution for 2 minutes, then allow to air dry. Quats sanitizer prepared in two compartment sink at time of inspection and measured at 200 ppm quats.

Observation: The following was observed:
1. High temperature dishwasher unable to reach minimum sanitizing temperature of 71 degrees C at the utensil surface
2. Back area hand sink faucet is leaking water
3. A hole is present in the wall located near the back door. Insulation is showing through.
Corrective Action(s): 1. Ensure high temperature dishwasher is capable of achieving at least 71 degrees C at the utensil surface. Date to be corrected by: May 6, 2019.
2. Ensure back area hand sink faucet is not leaking. Date to be corrected by: May 6, 2019.
3. Ensure that wall is properly sealed so that no hole(s) are present. Date to be corrected by: May 13, 2019.

- General sanitation good. No signs of pest activity observed at time of inspection.
