302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1) Chemical dishwasher had no detectable chlorine sanitizer at the time of inspection. Concentrated bleach had evaporated.
2) Cutting board for prep cooler is sanitized at the end of the night.
Corrective Action(s): 1) Chemical dishwasher must be able to provide 50ppm chlorine on the dish surface for proper sanitizing. Bleach bottle was replaced and dishwasher was primed at the time of inspection. Chemical dishwasher was tested at 50ppm chlorine. All items washed today have been rewashed and sanitized through the dishwasher.
2) Cutting board must be sanitized after each use or every 2 hours to prevent potential cross contamination of foods and food contact surfaces.

Observation: Food debris and accumulation was found along the door slide of the front sweet cooler and by the storage rack in the kitchen.
Corrective Action(s): Ensure facility is maintained in a clean and sanitary condition at all times to prevent potential pest attraction.

Observation: Prep cooler was at 7C and front sweet cooler was at 14C.
Corrective Action(s): Service or adjust prep cooler and ensure it can maintain 4C or less at all times. Potentially hazardous sweets in the front cooler were relocated to the walk-in cooler.

-Bleach spray bottle properly labelled and tested at 200ppm
-Cooling wand available to cool hot sauces - items were probed at 4C.
-Fried items are no longer stored in poultry boxes.
-Foods properly stored off the floor and covered.
-General food storage practices satisfactory at the time of inspection.
-Sweets by the cash register protected from potential contamination.
-No signs of pests noted at the time of inspection.
-Dairy stored in it's original container.
-Washroom clean and well maintained.
