Corrective Action(s): Ensure the janitorial sink is functional. 1 week.

Routine Inspection
- Hand washing stations fully equipped with soap, paper towels and hot/cold running water. All wall mounted soap dispensers must be functional. Hand washing stations are strictly for hand washing. Do not use hand washing stations for cleaning utensils.
- Coolers maintained at or below 4 degrees Celsius.
- Freezers maintained at or below -18 degrees Celsius. Note: Small freezer near the pop cooler requires defrosting
- Hot holding maintained above 60 degrees Celsius.
- All food covered and protected from contamination.
- Low temperature dishwasher sanitizing with 100 ppm chlorine.
- Bleach sanitizer = 200 ppm. Wiping rags stored in sanitizer - good.
- Ice machine clean.
- No indication of any pest activity at the time of inspection.

Reminder: Start recording temperatures for all cold holding units and hot holding units on a temperature log.
Reminder: All food products in the dry storage, walk in cooler and walk in freezer must be stored 6 inches off the floor.
