203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Observed multiple sets of recently cooked chicken being stored at room temp next to a mop head. Temperature of the chicken was measured to be between 58C-65C.
Corrective Action(s): Required operator to move the pan to a different area. Provided education that proper cooling of foods require smaller portions in shallow pans, away and protected from any sources of contamination. Cooked chicken was moved to a location and provided proper coverage to protect from contamination.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Two cleaning rags being used at the sushi bar were being rinsed only with water, not with sanitizer.
Corrective Action(s): Required operator to immediately remove those rags, rinse them and put them in a sanitizer bucket. Operator only had a spray at the time of inspection. Education provided that rags must be sanitized at all times to prevent contamination and to disinfect utensils and/or surfaces. Recommendation provided to have at least 6 rags, using 2 at a time. The remaining 4 would sit in the sanitizer bucket with 100-200ppm chlorine based sanitizer; after each use or after certain period of time, 2 rags will be rotated (2 being used goes back into sanitizer bucket and 2 taken out from sanitizer bucket.

Observation (CORRECTED DURING INSPECTION): Refer to code#300; cooked chicken being cooled next to a mop head. Temperature was measured to be at ~58C - 65C.
Corrective Action(s): Required operator to move the food item to a different location and provide a proper cover to protect from contamination

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation (CORRECTED DURING INSPECTION): Back door was propped open; which could potentially allow pests to enter.
Corrective Action(s): Required oprerator to either close and keep the door closed OR provide a proper screening door to prevent pest entrance. Operator closed the door at the time of inspection and stated will be providing a screendoor soon.

Follow up inspection for a routine #248556.

Quite a few violations require correction still. Reinforced importance to operator and that if not corrected by the next follow up, enforcement may be followed. Operator receptive.
