Observation (CORRECTED DURING INSPECTION): Used/dirty wash cloths/rags were kept on food preparation counters throughout the facility.
Corrective Action(s): The rags were moved to sanitizer buckets at the time of inspection. Ensure rags are kept in sanitizer, laundered, or discarded after each use to prevent the growth of pathogens and/or accumulation of toxins that can cause foodborne illness.

Observation (CORRECTED DURING INSPECTION): A cardboard box of mangoes was stored on the floor.
Corrective Action(s): The box of mangoes was re-located and stored on a milk-crate at least 6" off the floor. Floor is a potentially contaminated surface that can cross-contaminate food and cause foodborne illness. Ensure food is stored off the floor.

309 - Chemicals, cleansers, & similar agents stored or labeled improperly [s. 27]
Observation (CORRECTED DURING INSPECTION): OneShot roach killer (pesticide) was stored at the back of the kitchen.
Corrective Action(s): The chemical was removed from the kitchen area. The operator stated that it is only used around the back door to prevent roaches from coming in from the outside. No signs of roaches were seen indoors. Ensure pesticides are not used inside the facility. They should be stored away from food and food contact surfaces.

403 - Employee lacks good personal hygiene, clean clothing and hair control [s. 21(1)]
Observation (CORRECTED DURING INSPECTION): Used gloves were "saved" for re-use and stored on a food contact counter.
Corrective Action(s): The operator discarded the pair of gloves at the time of inspection. DO NOT re-use single use gloves. Follow proper glove hygiene: wash hands, put on a fresh pair of gloves, complete task, remove gloves, and wash hands. Glove use is not required. Frequent handwashing is encouraged instead.

Comments

Routine inspection of the food premises conducted.

Temperatures:
- Preparation cooler (back): inserts (not used), bottom: 2C
- Sliding door glass cooler: 3C
- Single door freezer: -20C
- Chest freezer: -19C
- Snow machine milk/cream was at 4C (kept cool with a cooling wand attached to the machine)

All units were equipped with accurate thermometers.

Sanitation:
- Hand washing sinks were adequately equipped with hot/cold running water, liquid soap, and disposable paper towels.
- Sanitizer pail and spray bottle had 200 ppm chlorine residual.
- High temperature dishwasher achieved 75C at the dish surface after the final rinse cycle.
- 2 compartment sinks were equipped with functional drain plugs.
- Unscented household bleach was available on site.
- Ice-machine (front) was not in use due to reduced business.
- Ice-shaving/snow machine was in good sanitary condition.

NOTE: Ensure used wash cloths are stored in sanitizer pails. *see violation above*

Storage and Pest Management:
- No signs of recent pest activity noted at the time of inspection.
- Items were covered in the coolers.

NOTE: OneShot roach killer was found in the back of the kitchen. Operator stated that it was only used around the back door to prevent pests from coming in. DO NOT USE PESTICIDES INSIDE THE FACILITY. *see violation above*

Administration:
- Operator has FOODSAFE level 1 certification valid until February 5, 2024.
- Permit was posted.

COVID-19 Safety:
- Masks are mandatory.
- Dine-in is closed.
- COVID-19 safety plan was incomplete.
