Comments

A routine inspection was completed, the following observations were made:
- Pizza assembly coolers 4C; Walk-in-cooler 3C; upright freezer was -10C; hot holding was 65C; and thermometers present.
- Quats sanitizer present and strength of 200ppm.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- Foods stored in food grade containers; covered; labeled; date coded; foods stored in groups; and foods stored 6" off the floor on shelves and racks.
- Some stainless steel covers have been purchased to cover pizza dough. More to be purchased to replace the plastic corrugated covers which are NOT food grade or cleanable.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good.
- All Purpose Lysol spray and "Orange Stuff" can be used to disinfect surfaces that food doesn't directly touch.
- Diversity All purpose sanitizer product shall be used on surfaces that will directly touch food (dough making table).
- Exhaust canopy and filters are clean.
- No signs of pests. A professional pest company has been contracted to monitor for pests.
- Holes in walls, behind the 3-comp sink, and drain pipe have been blocked to exclude pests.
- FoodSafe certified staff present.
- All in order.
