- 200 ppm Quats sanitizer used for sanitizing food contact surfaces and food equipment. Sanitizer test papers available to verify concentration.
*Ensure that water spray hoses and/ or running water is not flowing into sanitizer sink during manual warewashing as water dilutes sanitizer concentration.*
- Cleaning and sanitizing procedures for cutting boards reviewed with foodhandlers at time of inspection. Production room equipment and food contact surfaces are also cleaned and sanitized between the processing of different species.

Note: Only pork and beef are processed on site. Pork is cut and packaged. Beef may be cut, grounded, and packaged on site. No poultry processing on site - poultry is delivered to the premises already portioned and packaged by the supplier.
