A routine inspection was completed: - Coolers 4C or colder; freezers -21C or colder; hot holding units 60C; thermometers present; and temps recorded daily. - High temperature dishwasher had a rinse cycle temperature of 75.3C at the plate's surface. - Hand sinks stocked with liquid soap, paper towels, and running hot and cold water. - Bleach sanitizer in spray bottle and cloth bucket had [Cl2] of 200ppm. - All foods stored in food grade containers; covered; date coded; foods stored in groups with raw proteins separate from RTE foods; and foods stored 6" off the floor. - No expired foods in use or for sale. FIFO rules being followed. - General sanitation level is good. The exhaust canopy is clean. - Active pest control monitoring system in place. A few droppings round in the basement around the bundles of un-assembled pizza boxes. Clean these up and sanitize any surface that came into contact with the droppings. - FoodSafe certified staff present. - Door gaskets on the front pizza assembly cooler have been replaced. The doors close tightly and the gaskets can be cleaned. NOTE: Ensure the corners at the bottom of the basement stairs, and the corner below the dough sheeting machine are cleaned nightly to remove crumbs, flour and dough.
