205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: Found 3 calzones and 4 samosas, and 4 bagels to be store in a cooler at 7 C, internal temperature was 7 C.
Corrective Action(s): Bagels are to be moved to working cooler as they were in cooler less then 2 hours, calzones and samosas were discarded as temperature records show cooler has been above 4 C for at least 5 to 6 weeks. Do not use cooler until able to maintain 4 C.

Observation (CORRECTED DURING INSPECTION): Spray bottle had 50 ppm quat sanitizer
Corrective Action(s): Must ensure quat sanitizer is 200 ppm, or as per manufacture.
NOTE: must sanitize all food contact surfaces at least every 4 hours or after use, and must change wiping rags just as frequently.

Observation (CORRECTED DURING INSPECTION): Hand sink in the bag is blocked with containers.
Corrective Action(s): Must keep all hand sinks clear at all times.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Observed wraps thawing at room temperature on the back counter
Corrective Action(s): Must thaw foods in the cooler to prevent potential bacterial growth.
This is a repeat offense continued non-compliance will result in further enforcement such as orders and or tickets.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation (CORRECTED DURING INSPECTION): Display cooler was 7 C, records show was above 4 C for approximately 5 to 6 weeks.
Corrective Action(s): Cooler must be able to maintain 4 C or colder at all times. Temperature was adjusted at time of inspection. Keep monitoring, if unable to stay below 4 C must be serviced immediately.

- Milk cooler was 4 C
- Upright cooler in back was 2 C
- White freezer was -12 C
- Stainless Steel freezer was - 15 C
NOTE: if temperature is being recorded higher then what it should be corrective actions must be taken and document.
- Hand sink had liquid soap, paper towel, hot and cold water
- Dishwasher had a final rinse of 82 C at gauge and 72 C at plate
- No signs of pest activity noted during inspection
- General sanitation is satisfactory.
NOTE: use mop sink to dump dirty water in mop bucket not 2 compartment sink
