Note: Raw meats kept in the back.
Stove in back area with ventilation hood.
No signs of pests at time of inspection.
3 compartment sink with a small shelf above in back area with bleach available to sanitize.
Ventilation hood above a smoke room was turn off at the time of inspection (no production at the time of inspection).
Surface Quat sanitizer spray at 200 ppm. Quats located in front area and in back meat prep area.
Food storage - satisfactory.
