Observation: Some improvements to general sanitation can be done. Observed build-up of food residue inside on wire shelving on prep cooler. Plastic storage unit containing metal whisk, can opener has considerable debris inside that can contaminate utensils.

- Main cooler in kitchen at 4.2 degrees Celsius
- Prep cooler at 3.7 degrees Celsius
- Handsink stocked with soap + paper towels + hot/cold water. 2-comp sink being used as handsink and dishwashing
- Hot-held items above 60 degrees Celsius
- Secondary cooking step used for donair meat
- Sanitizer bottle at over 200 ppm Cl

- Recommended using less bleach to prepare sanitizer (1/4 to 1/2 cup)
- Observed small gap along the side of the back door that may allow pest entry. Recommend installing a screen door or otherwise filling in the gap.
