Observation (CORRECTED DURING INSPECTION): Cooked pearls were stored at room temperature. However, staff is aware that they must be discarded after a certain hours of it being cooked, however they do not know how long this time is.
Corrective Action(s): Please re-educate all staff to ensure they know how to properly use time as a control for holding cooked pearls at room temperature. If this procedure cannot be followed as exactly described in your Food Safety Plan, then cooked pearls will either need to be held cold at 4.0C or above 60.0C instead.
As per your Food Safety Plan, cooked pearls are to be held for 3 hours at room temperature then discarded. Staff labeled the cooked pearls during the inspection. It is expected that the time are labeled for all cooked pearls for 3 hours then discarded.

Routine inspection conducted today:
Handwash stations accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4.0C or below.
All freezer units were at -18.0C or below.
Sanitizer spray bottles available. 2 were tested and noted with 200 PPM chlorine residual.
Drain plugs available for the 3-compartment sink for manual warewashing.
Utensils noted in a sanitary condition and good repair.
No signs of pest activities noted during the inspection.
Overall facility noted sanitary and organized.
Staff's FOODSAFE level 1 equivalent available and verified.
