Observation (CORRECTED DURING INSPECTION): Handwashing station was blocked by container of onions. Staff was separating the onion rings into the container. When notified, staff moved container to location at the back. Discussed with staff that handwashing should never be blocked.

Observation (CORRECTED DURING INSPECTION): Staff was separating the onions rings in front of handwashing sink while another staff was washing hands. Discussed with staff to ensure another designated countertop must be provided for food preparation.

Observation: The following areas appeared uncleaned:
-Cabinet underneath carbonated beverage dispenser (old spills, cabinet door)
-Cabinets under the cashier area.
-Drawers of coffee condiments
-Cabinet underneath the juice dispenser
-Take out paper bags storage units (front)
Corrective Action(s): Clean and sanitize the areas noted above.

Comments

General Comments:
-Coolers:
Delfield cooler single door: 2C/3C
Delfield cooler: tomatoes at 10.2C (just received them and cut) - air temperature was reading -0.5C. Discussed with staff to allow air circulation of cooler by allowing a gap at the back of the shelves and to not store too much food in this cooler.
Front cooler: water 5C (not a lot of food stored in here, removed some packages of cream/milk to cooler at back).
Glass freezer (front): -13C
-Freezers:
Delfield undercounter freezer: -9C
Delfield double door freezer: -13C
-Hot holding = or >60C: gravy 72C, chicken 62C, other foods >60C
-No evidence of pests at time of inspection
-Staff were washing hands frequently
-200ppm quats in bucket in kitchen, 400ppm in bucket at back.
-Staff were using cloths to wipe counter frequently.

*Dish racks found on floor next to dishwasher. Staff washed and sanitize them and were instructed to keep them off the floor.
*Knife was able to be dislodged at time of inspection. Manager mentioned that it was cleaned as required from previous inspection.
*Mops heads were leaning towards the wall away from the storage rack as required from previous inspection report.
*Manager indicated pest technician were notified of the fruit flies issue as required from previous inspection report. No fruit flies noted at time of inspection.
